Not sure what the best approach for level 7 is.

Just put the

monkey block at the top of the slope and hit done when it is over the green. It doesn't have to be stationary.

Got it. Now stuck on 20. Same principle but sadisticly hard, its a straight drop.

20 appears to be the last level. It doesn't indicate it when you do it, but there is no level 21 when you go back to the level select screen.
