snails are cooked-you let them eat porridge for a few days before you eat them-so they are clean inside-then you take them out of the shells and cook them! thyre not at all slimy-bit like chewy mushrooms

there are quite a few scots working on rigs- but this is a high tech town and makes things for the rigs and aerospace-so we get people from all over the place
